
(serves 2-3 hungry people)
-chop 1 medium size onion/1 carrot/1 potato all into bite size pieces and mince 2-3 cloves of garlic
-saute garlic and onions in a pad of butter in a medium sized saucepan until the onions are translucent
-add the rest of the vegetables and continue to cook on medium/high heat for 5 min (keep the veggies moving during this time)
-remove the vegetables and set aside
-add your meat ( i used ground beef) and saute until it turns brown, then add your vegetables back in and toss once more
-add 1 cup of water and 2 cups of chicken stock/broth and simmer for 10-15 min or until potato pieces are fork tender
-add your curry roux blocks (half the package) (i've found the roux blocks dissolve quicker when they are grated but it doesn't make that much of a difference)
-simmer for an extra 5-10 minutes until the curry thickens and add half a grated apple, tablespoon of ketchup, and a dash of soy sauce (add the soy slowly as it's super salty and overpowering)
-salt/pepper to taste and serve over rice (smiling)
