I conducted a little experiment with pizza dough. I made some batches of dough and let them rise in different conditions for different times.

My oven only goes up to 250 C so I had to pre-bake the crust on two of them after some t&a.

1 Hour rising time in room temp.

The pie was blond as shit. Dough had no taste and texture was off. boo

24 Hour cold ferment (refrigerated)

Good texture, more flavour, crispy after pre-bake and flip midway through.

62 Hour cold ferment (refrigerated)

Best one of the three, the dough was super tasty and nicely crispcrisp. would rec.

also, cameron, please elaborate more on simple italian food stuff. i'd like to hear about that. the times i've been in italy, i always noticed how much better the food was by being simpler, and cleaner. american italian is delicious but the cleaner stuff was a breath of fresh air.

Made some chili! Had to keep it way more mild than I'd like because my sisters can't handle spicy foods; normally I like to add jalapenos and use hot sausage.

like once a month after a saturday of heavy drinking, i'll do my sunday seamless reorder of pineapple fried rice and yellow curry with chicken from the local thai place, and then i'll just lie in bed or on the couch the entire day watching top chef and slowly making my way through both plates
i think the delivery man judges me a little though
