I snapchatted cooking Canadian Thanksgiving and these were the results.
Note: Everything was vegetarian minus the turkey/gravy.
dry brine overnight. Stuffed with onions, bayleaf, and lemon. Herb butter with thyme, sage, parsley, other on the inside/outside of the skin.

Made pumpkin pie completely from scratch today
Definitely worth the extra work vs just using canned pumpkin

I had a delicious late lunch at Koya on this rainy day. Koya is definitely one of the best Japanese restaurants i've been to outside of Japan.
Pickled Beetroot
Roast Kabocha with black sesame and miso glaze (very tasty)
Curry Udon with extra roast veggies (not sure why they gave me extra, maybe it was the rain).
(all vegan)

So as of jan 1st I've decided to go vegetarian (I've been aware of the ethical issues behind meat for ages, but always enjoyed eating it too much to care)
my family are all very much meat-eaters so this'll mean me cooking for myself a lot more. what are your favourite cheap n quick veg/vegan recipes? Collected a few from this thread already (thanks !) but still on the prowl for more

if i'm just cooking for myself, i'll usually have a combination of pasta or rice or couscous with whatever vegetables are in the fridge and some tinned beans. so stuff like pasta in tomato sauce with butterbeans, rice with leafy greens and tofu etc, couscous with fried courgettes, aubergines and chickpeas. that's quick, easy and cheap.
