here's my understanding based on what i already know about gore and a bit of research i've done.
the Parsec is marketed as a softshell but it's actually not, the 'n70P GORE-TEX PRO' is basically one of their hardshell (waterproof/breathable) materials that they slap a microfleece lining on inside. I always thought the parsec was a softshell but if you take a look at the way it drapes when worn it is obviously not. the "best" gore-tex in terms of breathability is the "Gore-Tex Pro Shell" which is the industry standard and what you will find on any modern arcteryx or acronym hard shell.
the parsec is designed beautifully and would look great on you. i've heard bad things about the brushed lining, that it can be hard to pull sleeves through which is really the last thing i'd need from a heavy duty outer layer. i've never been able to handle one so this is all hearsay.
